Originally from New Zealand, I'm a London-based chef who has played a significant role in introducing contemporary and accessible Thai cuisine to the city. My culinary journey began with classical training in New Zealand, followed by two decades working in London. Initially focused on modern British cuisine, my fascination with Thai food took off after experiencing the vibrant flavours and traditions during my travels in Thailand. This passion led me to develop my skills under renowned chef David Thompson at Nahm, where I immersed myself in the traditional food markets and kitchens of Thailand. I later co-founded The Begging Bowl, now regarded as a cult favourite in London's restaurant scene.

Today, I operate as a global consultant to restaurants, international hotels, QSR and ready meal providers, listening closely to each brief and working collaboratively with clients to deliver results that truly meet their needs.
